Ingredients:

4 chicken thighs

1 piece of fresh ginger (about the size of a thumb),

1 onion,

2 cloves of garlic,

8 cups of water,

Salt and pepper to taste

Preparation:

1. Clean the chicken thighs, removing claws and skin.

2. Place the thighs, ginger, onion, and garlic cloves in a large pot

3. Add water and bring to a boil.

4. Reduce heat and simmer for 3-4 hours, until the meat easily comes away from the bone.

5. Remove the thighs from the pot and discard the bones. Return the meat to the soup and season with salt and pepper.
